Sun Dried Tomato Hummus

I love snacking on vegetables and hummus. It is quick to prepare, filling and packed with nutrients from vegetables and dips. I made this hummus after making sun dried tomato pesto and had some left.

Makes: 1 medium size bowl 
Preparation time: 5 minutes

– 2 cups cooked chickpeas
– 3 tbsp olive oil
– 2 tbsp tahini
– 1 tbsp lemon juice
– 1 tbsp sun dried tomato pesto
– 1 small clove garlic
– 1 tsp salt

Put all the ingredients in a food processor and process until smooth. Store in airtight container, it will last for about 3 days.
