Almond Protein Balls

These raw almond protein balls are one the easiest and delicious raw snacks I’ve ever made. I make them all the time. They are deliciously soft with bits of crunchy almonds, without added sugar or other nasty ingredients. Almonds are high protein, fats, vitamins and minerals, and consist of all essential amino acids. They alkalize your body, and great for your skin, hair and bones. I recommend medjool dates for this recipe as they really help stick the mixture together. I tried other type of dates, but I find them too dry and it just didn’t wont to stick together. Medjool dates are high in antioxidants, rich in potassium, iron and low in Glycemic index.

I like to have them after training, with morning porridge or when I crave something sweet.  You can make them in a batch and keep them in the airtight box in the fridge. They will last for minimum one month.

Serving: Makes about 15 balls

Preparation time: about 10 minutes

  • 1/2 cup almonds
  • 1 cup dates
  • 1 tbsp brown rice powder
  • 1 tbsp almond butter
  • Pinch of pink salt
  • 1 drop of natural almond essence
  • desiccated coconut for coating

Place the almonds into a high speed food processor and pulse for about a minute or two. You want to leave some big bits as this is going to give the balls nice crunch. Add the remaining ingredients and process until it forms sticky dough. If the mixture is too dry add a little bit of filtrated water. Roll out the balls out 15 balls and coat them with the shredded coconut. Serve immediately or store in an airtight container.
