Baobab Paleo Granola Squares

I first made these baobab granola bars so I could have breakfast on the go but I liked them so much so I’m now making all the time. I have it as an afternoon snack, post workout meal or just when I fancy something sweet.

Makes: 20 squares or 8×8 inch cake pan
Preparation time: 15 minutes

Ingredients:
– 1 cup almonds
– 1 cup cashew nuts
– 1/2 cup sunflower seeds
– 1/2 cup pumpkin seeds
– 1/4 cup raisins
– 1/4 cup coconut oil
– 1/4 cup maple syrup
– 2 tbsp ground flax seeds
– 1 tbsp chia seeds
– 1 tbsp baobab powder
– 1/4 tsp salt

Grease the cake tin and line it with the parchment paper. In a high speed food processor with an S blade pulse the nuts for about 2 minutes or until roughly chopped. Remove from the processor and put in a large mixing bowl. Add the remaining dry ingredients and give it a good stir. In a sauce pan heat the dry ingredients over the medium heat. Pour over the dry ingredients, give it another good stir and transfer to the cake tin. Evenly spread the mixture using a spatula and allow to set, for best results allow to set overnight. Remove from the tin and cut out 16 small squares.
