Guilt free cupcakes

Hi to all,

We’re only one week away from Mother’s Day. 🙂 Have you already got your mum a present? If you’re lack ideas read my post Mother’s day gift ideas.

However, if you would like to give her something very original this year, why not bake her healthy gluten free cupcakes.

For these gorgeous cupcakes I used rice flour and coconut sugar. Rice flour is naturally gluten free and ideal for baking and coconut sugar is more nutritious and lower on the glycemic index than normal white sugar. Also, coconut sugar contains important minerals such as: Iron, Zinc, Calcium and Potassium and which makes it a perfect healthy sweet treat. However, use it sparingly as it is still high in fructose and calories.

Here is what I used for cupcakes:

– 1 cup of coconut rice milk

– 1 cup of coconut sugar, sifted

– 1/3 cup of extra virgin olive oil

– 1 tbsp vinegar

– 1 tbsp organic vanilla extract

– 1 tsp organic almond extract

– 1.5 cups rice flour, sifted

– 1/3 organic cocoa powder, sifted

– 1 tsp baking soda

– some Himalayan pink salt

Method:

Preheat oven to 180 degree and line a cupcake pan with cupcake liners. With an electric mixer, beat together in a large bowl milk, oil, sugar, vinegar, vanilla and almond extract.Beat on a medium speed for a about a couple of minutes.

Slowly add all the rest of the ingredients: flour, cocoa powder, baking soda, and salt). Mix well on a very slow speed until all the clumps are gone.

Spoon the batter into prepared cupcake pan, fill up to about two thirds capacity.

Bake for approximately 20 mins at 180 degrees Celsius, or until the cupcakes slowly spring back when pushed down on. Cool them completely before frosting.

For peanut butter frosting:

– 1/2 cup peanut butter

– 1/3 cup coconut butter

– 1 tbsp Freshly squeezed lemon juice

– 1 tsp organic vanilla extract

– 1 cup powdered stivia

– 1 – 2 tbsp almond milk, to desired consistency

Method:

In a mixing bowl, beat both butters. Mix well and add lemon juice, vanilla extract and stivia. Mix until well combined. Add almond milk slowly and beat it until smooth and silky. Pipe or spread onto cooled cupcakes.
